The story behind Saint Street…
Head chef and owner Morgan Knight always dreamed of opening a bakery. From the time she could hold a whisk, Morgan was interested in making desserts that were reminiscent of the ones she saw in cartoons; desserts that were bright, colorful, and fun. As she grew older, more “practical” career goals came into play… Morgan went to college in Boston with big plans to become a lawyer, and maybe open a bakery in her retirement. She became passionate about law and civil rights, and fully engulfed herself in legal studies (speech and debate, model government, you name it). On the side, baking always remained Morgan’s first love; she spent years developing recipes, exploring new flavors, and fine-tuning her cake decorating skills for friends’ birthdays and family gatherings.
When the pandemic hit, Morgan was half way towards her Bachelor’s degree, and her roommate’s 21st birthday was coming up. It was still too dangerous to throw a party, so Morgan made an intricate strawberry birthday cake with heart shaped macarons to celebrate, and to share with her roommates. After a few Instagram story posts, friends (and friends of friends) began asking “WHERE did you get that cake?!”, and quite suddenly, by a twist of fate and with the encouragement of the roomies, Saint Street Cakes was born. (“Saint Street” pays homage to 183 Saint Botolph Street, Unit 2; the original, beloved former home of Saint Street Cakes, Morgan, and her 3 roommates). Morgan began posting the cakes on social media, and from there, virality hit; Saint Street Cakes gained a life and fanbase of its own.
After graduating from Northeastern with a degree in Political Science, Morgan continued on the legal path and worked as a paralegal for the Civil Division of the US Attorney’s Office for the Southern District of New York, continuing to make cakes on the weekends. Saint Street Cakes continued to thrive, both on social media, and in the real world. After a long day of legal work, Morgan would come home to her tiny NYC kitchen and prep orders for the weekend. Before work, as early as 5AM, Morgan would film and edit content collaborations with brands like Tory Burch, Ritual, Blueland, etc. for social media. Nearly 2 years into her legal career (and making cakes during her “spare time”) it came time to make the decision… would she go to law school, or pursue cakes full time? If you’re already this far into this “About” section, we hope it’s clear that Morgan chose the cake route. Morgan fell in love with creating edible art, and being able to use her work to help people celebrate life’s greatest moments. She immediately knew that she wanted to open up a storefront, but waited until the perfect place came along at 86 S Portland Ave. (roughly a year and a half after quitting her legal job and making 15-20 cakes a week solo). Morgan continues her political passions through grassroots fundraising with Saint Street— each month, we donate a portion of our proceeds to a different organization that Morgan and our staff are passionate about. Previous recipients include the Marsha P Johnson Foundation, Sister Song, the Trevor Project, Send Chinatown Love, the Palestinian Childrens’ Relief Fund, and more.
Saint Street Cakes’ storefront opened its doors on June 27th, 2025— two days before Morgan’s 25th birthday. We are so excited to finally have a space to host you for a slice of cake, a cookie, a cup of tea, and a sweet time. Check out the article to the left for more about our founding!
